Matthew's Smoked Salmon Pasta Salad

Serves 4



400g pasta – Fusilli, Rotini, Farfalle, Conchiglie are the bestshapes for this.

200g smoked salmon

A lemon: Juiced and zested

Good Olive oil

Small bunch of Dill

50g rocket leaves

Black pepper



Boil the pasta to the instructions on the packet.

Slice the smoked salmon into strips.

Zest & Juice the lemon and keep separate.

Once the pasta is cooked & drained, place back in saucepan and drizzle with olive oil and mix in the smoked salmon, you want the salmon to cook through. Allow to cool in the saucepan, then add the Lemon juice and zest before chillingin the fridge.

Just before serving, mix in the fresh dill, rocket leaves & cracked black pepper and serve.
